Can this floor ever be sanded and refinished, and how many times realistically?

Sherry can be refinished, but the 2 mm wear layer limits how many times you can do it. In most cases, a light screen-and-recoat is possible once or twice over the floor’s life — a full sand-down is typically not recommended with a 2 mm layer, as it risks cutting through to the core.

How long will it actually take to get this floor installed — one room or a whole house?

A single room typically takes one to two days once the floor has acclimated.
